As with the better vintage wines, there is not just one honey but many, with an incredible variety depending on the flowers used and their region of origin. Melliferous flowers and plants secrete nectar , and trees secrete honeydew , sweet substance that is gathered by the bees, and which, once collected, stored and mature in the hive, give each honey its specific flavours, its strength or mildness, its colour and consistency.
There are therefore as many varieties of honey as of flowers, plants and melliferous trees. Honeys are classified according to their origins: * Honey made from tree honeydew, honey made from flower nectar. * Floral origin : monofloral products are made from single species such as acacia, heather, lavender, rosemary or clover, while polyfloral products , "toutes fleurs"honey, are often classified according to the place of collection (plains, mountains, forest, etc.) or the seasons (spring honey, summer honey). * Geographical Origin : Regional honeys are classified according to their geographical origin and the usual flora of the area : Pyrenean, Anjou, Corsican, Gâtinais honey and honey from France.
